How to Throw A Raclette Party

Raclette comes from the French word Raclerâ, which means “to scrape.” It is a cheese traditionally eaten in Switzerland. The Swiss cow herders used to take the cheese with them when they were moving cows to or from the pastures up in the mountains. In the evenings around the campfire, they would place the cheese next to the fire and, when it had reached the perfect softness, scrape it on top of some bread. Today we use fancy machines to do the melting, but the results are just as tasty. The cheese has a mellow, slightly funky flavor that makes it the perfect accompaniment to almost anything, and the texture is ideal for melting.

Throwing a Raclette Party is easy. The key is to have a nice variety of meats, veggies and bread for topping with the gooey cheese. There are 2 kinds of raclette machines: one holds a quarter wheel of the cheese and heats it under a lamp, the other heats individual portions of cheese on little pans. If you don’t have a raclette machine you can use a nonstick pan to melt slabs of the cheese, it’s just a little messier.

Artisanal Breads

Vegetables: Small Potatoes, Roasted Brussels Sprouts, Roasted Butternut Squash, Cipolline Onions, Cauliflower

Meats: Prosciutto, Speck, Jambon Royale, Finocchiona Salami, Chorizo, Roasted Pork

Fruits that go with cheese: Sliced pears, sliced apples

Fruits to refresh the palate: Grapes, Berries, Dried fruits

Acidic and briny bites to refresh the palate: Cornichons, Olives

5 Ways to Have a Blue Christmas

Here at Murray’s we have been raving about Roquefort all month long. Can you blame us? Roquefort is classic, tasty and versatile, perfect for this time of year when lots of people are entertaining.

After we nearly had to say au revoir forever we renewed our love for this French beauty and never looked back. Let’s just say we hope it’s standing nearby when the clock strikes 12 on New Year’s Eve.

And to improve the odds of that happening, here are 5 tasty ways to enjoy one of our favorite cheeses.  Bon appetit!

1. Fresh endive leaves topped with crumbled Roquefort, candied nuts and a dried cherry or cranberry. Sweet. Salty. Crunchy. Awesome.

2. Spread some Roquefort on a fig and wrap it in prosciutto. OH YEAH.

3. Serve a hunk of Roquefort au naturale. With a nice Sauternes on the side. Why mess with a classic?

4. Top your favorite cracker with some Roquefort and drizzle with honey. This sweet treat is the bees knees.

5. Whip it! Roquefort whipped with equal parts butter and cream cheese or sour cream makes an excellent dip. Whip it good! Veggies, chips and all things dip-able will be the perfect companion.

Recipe: Grana Padano, Watercrewss, Fig and Walnut Salad

We’re Grana Padano-crazy this month!  Kick your salads up a notch with this perfect-for-fall recipe using one of our favorite nutty cheeses.

Serves 4

1/3 C walnut halves

2 T soft brown sugar

2 T balsamic vinegar

6 figs, quartered

1/3 C watercress, thick stems removed

2 T Grana Padano shavings

1 T olive oil

  1. Heat a frying pan and toast the walnuts until they turn golden brown.  Remove from the pan.
  2. In the same hot pan, sprinkle the sugar and leave to melt over a high heat before pouring in the balsamic vinegar—it will bubble rapidly.
  3. Add the figs and cook for 1-2 minutes in the caramel.  Take off the heat.
  4. Divide the watercress between four plates and pour the juices over the figs.
  5. Sprinkle with the walnuts and shavings of Grana Padano and finally the olive oil.  Serve immediately.
