Meet the Maker: Callie’s Charleston Biscuits

Biscuits taste better when they’re made with love–at least, that’s certainly the case with Callie’s, a Charleston-based outfit started by Carrie Morey to serve up her mother’s original Southern-style biscuit recipes. We sat down with Carrie to get the inside scoop on what makes these oven-ready biscuits so mouthwatering, and how family values inspire this Southern operation.

Callie’s is built on family recipes and values—how is this a central component to the brand, and how does it affect the way you do business?

When I started Callie’s in 2005, I made sure I’d always have time to be with my family and pick my girls up from school as they grew. Family comes first, always! When it comes to the brand, that doesn’t change. Our small business strives to treat each other like family. We know that kindness wins and traditions should not be broken. That’s why we’ve made biscuits by hand (the same way my mother did) for almost 15 years. 

Traditional Southern flavor are a big part of the brand, what are some ways that’s incorporated into your baking? 

We are firm believers that White Lily flour makes the best biscuits. My family has always used it and our bakery uses it daily. We use South Carolina Hickory Hill Buttermilk in our recipes, and we strive to work with only the best Southern jam, meat, and honey purveyors.

How closely do your biscuits follow Carrie’s mother’s original recipe?

We don’t stray from tradition. Our recipe is the same exact recipe as my mother’s original. We have also expanded on that recipe to offer several mouthwatering flavors.

Which flavors or items are the biggest favorites among your customers?

The classic Buttermilk is the most versatile biscuit– perfect on its own or smothered in your favorite topping! However, the Cheese & Chive biscuit has won us seven SOFI™ awards with its perfect savory flavor and our Cinnamon biscuit is quickly becoming our online bestseller.

What was the inspiration to establish Hot Little Biscuit locations, and has it been an integral part of establishing Callie’s in various communities?

The Callie’s Hot Little Biscuit eateries became an idea on my cookbook tour. From state to state, everyone kept asking me the same question: “Where can we get your biscuits hot?” That’s when the idea of the “hot little biscuit” became a reality. We’ve been in business for 5 years now and we are about to open our 4th location. Being on the lively King Street in Charleston, SC, we garnered many fans and supporters, but it’s also helped us grow the mail order and wholesale biscuit business too.

What’s next for Callie’s? Are you guys planning any new flavors, or looking to expand more?

In 2020, we will be in our 15th year of business. It seems surreal! Each year we grow a little bit more. By the end of 2019, our fourth Callie’s Hot Little Biscuit eatery will be open in Charlotte, NC. Our food truck, Butter, will also be hitting the streets and serving hot biscuits near and far. We have a lot of exciting plans, so stay tuned!
